Produced by Diego Bermudez at Finca El Paraiso. This coffee de-pulped after harvested, exposed to a long dry and anaerobic fermentation for 24 hours and dried in a controlled environment at 25 deg celcius, to 10.5% moisture content.
This microlot is 100% Tabi. This is a new varietal developed by "Federacion Nacional de Cafeteros". This unique varietal is a cross between Timor hybrid, Bourbon and Typica. The word Tabi means good in the Guambiano dialect.
